Bite Size Pecan Pies | Perfect Party Dessert

First off, who doesn’t absolutely love pecan pie? I’m not completely sure why it is so underrated! These pies can be ready in 45 minutes or less and are so delicious it will be difficult to just eat one :) Try this recipe if you’re looking for something to bring to your next party. They’re perfect for Christmas, Easter, Mother’s Day, 4th of July, or even someone’s birthday!

These bite sized dessert pies are perfect for your next party. It’s always nice when guests can grab-and-go with the food rather than having to plate each piece. Plus, more people are likely to eat it when it’s so cute and small!


So, for the crust you have two choices.

1) Make your own

2) Buy ready made

I made my own for this recipe and it tasted sooo great, but in the future I’ll probably just buy ready made because it will save sooo much time and effort. To me, since it’s already not a healthy recipe, I’d just buy it to make my life easier!

Bite Sized Pecan Pies

Bite Sized Pecan Pies

Ingredients:

  • 1 {re-made Pie Crust
  • 1/4 Cup Light Brown Sugar, packed tight
  • 1/3 Cup Light Corn Syrup
  • 1.5 Tbsp unsalted butter
  • 1 egg
  • 1/2 tsp vanilla extract
  • 2/3 cup chopped pecans

Instructions:

  1. Preheat oven to 350.
  2. On a lightly floured surface, roll out the pie dough so it is a little bit bigger than the size of your cupcake pan.
  3. Using either a cookie cutter or small glass (with about a 3 inch diameter) cut out 12 individual pie crust circles.
  4. Carefully place each dough into the cupcake pan. The sides should come up creating a sort of pie bowl if you will.
  5. In a small bowl, mix all other ingredients.
  6. Scoop about 1 Tbsp of the pie mix into each mini pie.
  7. Bake for about 25-30 minutes. Depending on your dough, the time could change so keep a close watch. The filling should be set and not jiggly.
  8. Let cool in pan for about 10-15 minutes before removing and serving!
